Adana kebab is a spicy Turkish grilled meat dish made with minced meat, pepper and pul biber. Serve it with lavash, onion salad and grilled tomato.

About this dish

Adana kebab is a spicy Turkish grilled meat dish made with minced meat, pepper and pul biber. Serve it with lavash, onion salad and grilled tomato.

Ingredients

  • 600 g minced lamb or beef
  • 100 g tail fat or 2 tbsp olive oil
  • 1 red pepper, very finely chopped
  • 1 small onion, grated and squeezed dry
  • 2 tsp pul biber or chili flakes
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 small bunch parsley, finely chopped
  • Lavash or flatbread for serving
  • 2 tomatoes for grilling
  • 2 green peppers for grilling

Instructions

  1. Mix the minced meat, tail fat or olive oil, red pepper, onion, pul biber, paprika, salt and black pepper.
  2. Knead the mixture well for 5–6 minutes until it becomes firm and sticky.
  3. Cover and let the meat rest in the fridge for at least 20 minutes.
  4. Divide the mixture into 4 portions and shape it around wide skewers.
  5. Grill the kebabs over high heat for 8–10 minutes. Turn often.
  6. Grill the tomatoes and green peppers on the side.
  7. Sprinkle with parsley and serve with warm bread.

Tips

  • Knead the meat well, otherwise it may fall off the skewers.
  • Use wide metal skewers if you have them.
  • Do not make the mixture too wet. Squeeze the onion well.
  • Serve Adana kebab with lavash, onion salad, grilled tomato, grilled pepper and yoghurt on the side.
