Adana kebab
Adana kebab is a spicy Turkish grilled meat dish made with minced meat, pepper and pul biber. Serve it with lavash, onion salad and grilled tomato.

Adana kebab is a spicy Turkish grilled meat dish made with minced meat, pepper and pul biber. Serve it with lavash, onion salad and grilled tomato.
Ingredients
- 600 g minced lamb or beef
- 100 g tail fat or 2 tbsp olive oil
- 1 red pepper, very finely chopped
- 1 small onion, grated and squeezed dry
- 2 tsp pul biber or chili flakes
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1 small bunch parsley, finely chopped
- Lavash or flatbread for serving
- 2 tomatoes for grilling
- 2 green peppers for grilling
Instructions
- Mix the minced meat, tail fat or olive oil, red pepper, onion, pul biber, paprika, salt and black pepper.
- Knead the mixture well for 5–6 minutes until it becomes firm and sticky.
- Cover and let the meat rest in the fridge for at least 20 minutes.
- Divide the mixture into 4 portions and shape it around wide skewers.
- Grill the kebabs over high heat for 8–10 minutes. Turn often.
- Grill the tomatoes and green peppers on the side.
- Sprinkle with parsley and serve with warm bread.
Tips
- Knead the meat well, otherwise it may fall off the skewers.
- Use wide metal skewers if you have them.
- Do not make the mixture too wet. Squeeze the onion well.
- Serve Adana kebab with lavash, onion salad, grilled tomato, grilled pepper and yoghurt on the side.
