Kısır is a Turkish bulgur salad with tomato paste, herbs, lemon and olive oil. Fresh, filling and easy to make.

Ingredients

  • 250 g fine bulgur
  • 300 ml hot water
  • 2 tbsp tomato paste
  • 1 tbsp red pepper paste
  • 4 tbsp olive oil
  • 2 tbsp pomegranate molasses
  • Juice of 1 lemon
  • 3 spring onions, finely chopped
  • 1 small cucumber, finely chopped
  • 2 tomatoes, finely chopped
  • 1 small bunch parsley, finely chopped
  • 1 small bunch fresh mint, finely chopped
  • 1 tsp pul biber or chili flakes
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Place the bulgur in a large bowl and pour over the hot water.
  2. Cover the bowl and let the bulgur soak for 10–12 minutes.
  3. Stir in the tomato paste, red pepper paste, olive oil, pomegranate molasses and lemon juice.
  4. Mix well until the bulgur has an even red colour.
  5. Add the spring onions, cucumber, tomatoes, parsley and mint.
  6. Season with pul biber, cumin, salt and black pepper.
  7. Let the salad rest for 10 minutes before serving.

Tips

  • Use fine bulgur, not coarse bulgur.
  • Add more lemon or pomegranate molasses if you want a fresher taste.
  • Kısır often tastes better after resting for a short while.
  • Serve Kısır with lettuce leaves, lemon wedges and as part of a meze table.
