Tulumba tatlısı is a classic Turkish dessert with a crispy outside, soft centre and sweet sugar syrup.
Ingredients
- 250 ml water
- 50 g butter
- 1 tbsp sugar
- 1 pinch salt
- 150 g plain flour
- 3 eggs
- 1 tbsp semolina
- 1 tbsp cornstarch
- 1 litre neutral oil for frying
- Syrup:
- 500 g sugar
- 400 ml water
- 1 tbsp lemon juice
Instructions
- Boil the sugar, water and lemon juice for 12–15 minutes. Cool completely.
- Bring the water, butter, sugar and salt to a boil.
- Stir in the flour until a firm dough forms.
- Let the dough cool for 10 minutes.
- Mix in the eggs one at a time.
- Add the semolina and cornstarch.
- Transfer to a piping bag with a star tip.
- Pipe short lengths directly into cold oil.
- Fry over medium heat until golden brown.
- Transfer the hot tulumba to the cold syrup for 2–3 minutes.
- Drain before serving.
Tips
- Hot pastries and cold syrup give the best texture.
- Garnish with chopped pistachios if desired.
