Tulumba tatlısı is a classic Turkish dessert with a crispy outside, soft centre and sweet sugar syrup.

Ingredients

  • 250 ml water
  • 50 g butter
  • 1 tbsp sugar
  • 1 pinch salt
  • 150 g plain flour
  • 3 eggs
  • 1 tbsp semolina
  • 1 tbsp cornstarch
  • 1 litre neutral oil for frying
  • Syrup:
  • 500 g sugar
  • 400 ml water
  • 1 tbsp lemon juice

Instructions

  1. Boil the sugar, water and lemon juice for 12–15 minutes. Cool completely.
  2. Bring the water, butter, sugar and salt to a boil.
  3. Stir in the flour until a firm dough forms.
  4. Let the dough cool for 10 minutes.
  5. Mix in the eggs one at a time.
  6. Add the semolina and cornstarch.
  7. Transfer to a piping bag with a star tip.
  8. Pipe short lengths directly into cold oil.
  9. Fry over medium heat until golden brown.
  10. Transfer the hot tulumba to the cold syrup for 2–3 minutes.
  11. Drain before serving.

Tips

  • Hot pastries and cold syrup give the best texture.
  • Garnish with chopped pistachios if desired.
