Lahmacun is a thin Turkish flatbread topped with spiced minced meat. Serve it hot with lemon, parsley and salad.

Ingredients

  • 500 g plain flour
  • 300 ml lukewarm water
  • 1 tsp dry yeast
  • 1 tsp sugar
  • 1 tsp salt
  • 2 tbsp olive oil
  • 300 g minced lamb or beef
  • 1 onion, finely chopped
  • 2 tomatoes, finely chopped
  • 1 green pepper, finely chopped
  • 2 tbsp tomato paste
  • 1 tbsp red pepper paste
  • 1 small bunch parsley, finely chopped
  • 1 tsp pul biber or chili flakes
  • 1 tsp cumin
  • 1/2 tsp black pepper
  • 1 tsp salt

Instructions

  1. Mix the flour, dry yeast, sugar and salt in a bowl.
  2. Add the lukewarm water and olive oil. Knead into a soft dough.
  3. Cover and let the dough rise for 40 minutes.
  4. Mix the minced meat, onion, tomatoes, green pepper, tomato paste, red pepper paste, parsley and spices.
  5. Divide the dough into 8 pieces and roll them out thinly.
  6. Spread a thin layer of meat topping over each base.
  7. Bake in a hot oven, preferably 250 degrees, for 7–9 minutes until the edges are crisp.

Tips

  • Roll the dough as thinly as possible.
  • Use a light layer of topping, otherwise the lahmacun becomes heavy.
  • Bake on a preheated tray or pizza stone for a crispier base.
  • Serve Lahmacun hot with lemon wedges, parsley, onion, tomato and salad.
