Sigara Börek are crispy fried yufka rolls filled with cheese and parsley. A classic Turkish meze that is easy to make.

Ingredients

  • 3 yufka sheets
  • 200 g feta cheese
  • 100 g grated mozzarella
  • 2 tbsp finely chopped parsley
  • 1/2 tsp black pepper
  • 2 tbsp water
  • oil for frying

Instructions

  1. Crumble the feta into a bowl and mix with mozzarella, parsley and black pepper.
  2. Cut each yufka sheet into 4 triangles so you get 12 pieces in total.
  3. Place a little filling on the wide end of each triangle.
  4. Fold the sides in slightly, roll tightly and brush the tip with water to seal.
  5. Heat oil in a pan or small pot over medium heat.
  6. Fry the börek in batches for 2–3 minutes until golden and crispy.
  7. Let them drain on paper towels.
  8. Serve warm.

Tips

  • Keep the yufka covered with a kitchen towel while you work so it does not dry out.
  • Serve with lemon or yogurt on the side.
