Sütlaç is a classic Turkish rice pudding made with milk, sugar and rice. It is served cold, often with cinnamon on top.

Sütlaç is a classic Turkish rice pudding made with milk, sugar and rice. It is served cold, often with cinnamon on top.

Ingredients

  • 100 g pudding rice or short-grain rice
  • 500 ml water
  • 1 litre whole milk
  • 150 g sugar
  • 1 tbsp cornstarch
  • 100 ml milk for mixing the cornstarch
  • 1 tsp vanilla sugar
  • 1 pinch of salt
  • Cinnamon for serving

Instructions

  1. Rinse the rice and place it in a saucepan with the water.
  2. Cook over medium heat until the rice is soft and most of the water has been absorbed.
  3. Add the whole milk, sugar, vanilla sugar and salt.
  4. Simmer for 20–25 minutes. Stir often so it does not stick to the bottom.
  5. Mix the cornstarch with 100 ml cold milk.
  6. Pour the mixture into the saucepan while stirring.
  7. Cook for another 5 minutes until the sütlaç thickens slightly.
  8. Divide into bowls and cool completely.

Tips

  • Use whole milk for the best taste and texture.
  • Stir often, especially near the end.
  • Sütlaç should be creamy, not too thick.
  • Serve cold with cinnamon on top. It can also be lightly baked in the oven for a golden surface.
